Creamy lemon squares recipe.

★Ingredients

For the crust:

1 cup all-purpose flour

1/2 cup (1 stick) unsalted butter, softened

1/4 cup granulated sugar

For the filling:

1 cup granulated sugar

2 tablespoons all-purpose flour

1/2 teaspoon baking powder

2 large eggs

1/4 cup fresh lemon juice (about 2 lemons)

1 tablespoon grated lemon zest (optional for extra flavor)

Powdered sugar for dusting

★Instructions

1. Preheat the oven:
Preheat your oven to 350°F (175°C).

2. Prepare the crust:

  • In a medium bowl, combine the flour and granulated sugar.
  • Cut in the softened butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Press the mixture evenly into the bottom of an ungreased 8×8-inch baking dish.

3. Bake the crust:

  • Bake the crust in the preheated oven for 15-20 minutes, or until it is lightly golden brown.
  • Remove from the oven and let it cool slightly while you prepare the filling.

4. Prepare the filling:

  • In another medium bowl, whisk together the granulated sugar, flour, and baking powder.
  • Add the eggs, lemon juice, and lemon zest (if using). Whisk until the mixture is smooth and well combined.

5. Pour the filling over the crust:

  • Pour the lemon filling over the slightly cooled crust, spreading it evenly.

6. Bake the lemon squares:

  • Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.

7. Cool and dust:

  • Allow the lemon squares to cool completely in the baking dish.
  • Once cooled, dust the top with powdered sugar for a decorative finish.
