Texas Turtle Sheet Cake

★Ingredients

For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda

1/2 tsp salt

1/4 cup unsweetened cocoa powder

1 cup unsalted butter (2 sticks)

1 cup water

1/2 cup buttermilk

2 large eggs

1 tsp vanilla extract

For the Toppings:

1 bag (14 oz) caramels, unwrapped (or use homemade caramel sauce)

1/4 cup heavy cream

1/2 cup chopped pecans

1/2 cup semi-sweet chocolate chips

For the Frosting:

1/2 cup unsalted butter (1 stick)

1/4 cup unsweetened cocoa powder

6 tbsp milk

4 cups powdered sugar

1 tsp vanilla extract

★Instructions

  1. Preheat and Prepare:

Preheat your oven to 350°F (175°C).

Grease and lightly flour a 13×9 inch sheet pan or baking dish.

  1. Make the Cake:

In a large bowl, whisk together the flour, sugar, baking soda, and salt.

In a medium saucepan, combine the butter, water, and cocoa powder over medium heat. Stir until the butter is melted and the mixture is smooth. Bring to a slight boil, then remove from heat.

Pour the cocoa mixture into the dry ingredients and mix to combine.

In a small bowl, whisk together the buttermilk, eggs, and vanilla. Add this to the cake batter and stir until smooth.

Pour the batter into the prepared sheet pan and bake for 20-25 minutes, or until a toothpick comes out clean. Let it cool for a few minutes.

  1. Prepare the Caramel Topping:

While the cake is baking, melt the caramels with heavy cream in a saucepan over low heat, stirring constantly until smooth. Once the cake has cooled slightly, drizzle the caramel evenly over the cake.

Sprinkle the chopped pecans and chocolate chips over the caramel layer.

  1. Make the Frosting:

In a saucepan, melt the butter over medium heat. Add the cocoa powder and milk, stirring constantly until smooth and slightly thickened. Remove from heat.

Gradually whisk in the powdered sugar and vanilla until smooth.

Pour the warm frosting over the cake, spreading it evenly to cover the pecans, caramel, and chocolate chips.

  1. Let the Cake Set:

Allow the cake to cool completely for the toppings to set before cutting into squares.
