1 small onion, finely chopped
1 pound ground beef
2 cloves garlic, minced
1 teaspoon ground cumin
Salt and pepper to taste
1 teaspoon paprika
1 cup shredded mozzarella cheese
1 package (about 10) empanada dough rounds (you can find these in the freezer section of most grocery stores)

In a skillet, cook the ground beef over medium heat until browned. Add the onion and garlic, and cook until softened.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Stir in the cumin, paprika, salt, and pepper, and cook for another minute. Remove from heat and let cool slightly.
Place a spoonful of the beef mixture onto one half of each empanada dough round, leaving some space around the edges.
Sprinkle a little shredded mozzarella cheese over the beef mixture.
Fold the other half of the dough over the filling to create a half-moon shape, and press the edges together to seal. You can use a fork to crimp the edges if you like.
Place the empanadas on the prepared baking sheet and brush the tops with a little oil.
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
