1 lb ground beef
1 onion, diced
4 cups diced potatoes
3 cloves garlic, minced
4 cups beef broth
2 cups milk
1 cup heavy cream
2 tablespoons flour
1 cup shredded cheddar cheese
Salt and pepper to taste
Optional toppings: chopped green onions, cooked and crumbled bacon
★Instructions
In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Stir in diced potatoes and beef broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
Add diced onions and minced garlic to the pot with the cooked beef. Cook until onions are translucent.
In a separate bowl, whisk together milk, heavy cream, and flour until smooth. Pour the mixture into the pot with the soup, stirring constantly.
Let the soup simmer for another 5-10 minutes, stirring occasionally, until slightly thickened.
Stir in shredded cheddar cheese until melted and fully incorporated.
