1/2 cup grated mozzarella cheese
2 medium zucchinis, grated
1/4 cup all-purpose flour
2 eggs
Salt and pepper to taste
2 tablespoons chopped fresh dill
Olive oil for fryin
Old mashed bread with vanilla sauce
★Instructions
Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
In a mixing bowl, combine the squeezed zucchini, grated mozzarella, eggs, flour, chopped dill, salt, and pepper. Mix until well combined.
Heat some olive oil in a large skillet over medium heat.
Spoon the zucchini mixture into the skillet, forming pancakes about 3 inches in diameter. Flatten them gently with a spatula.
Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy.
Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
