Simple spinach roll recipe

★Ingredients

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

200g spinach, chopped

250g ricotta cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 egg, beaten (for egg wash)

2 sheets of puff pastry, thawed

★Instructions

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Add chopped spinach to the pan and cook until wilted. Remove from heat and let it cool.

Heat olive oil in a pan over medium heat. Add chopped onion and cook until translucent, then add minced garlic and cook for another minute.

In a mixing bowl, combine the cooked spinach mixture, ricotta cheese, Parmesan cheese, salt, and pepper. Mix well.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.

Spoon the spinach and ricotta mixture onto each pastry square, leaving a border around the edges.

Roll up each pastry square tightly to enclose the filling, then place seam side down on the prepared baking sheet.

Brush the tops of the rolls with beaten egg wash.

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crispy.
