1 cup water
1/2 cup unsalted butter
4 large eggs
1 cup all-purpose flour
Pinch of salt
Whipped cream or pastry cream for filling
Powdered sugar for dusting (optional)
★Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a medium saucepan, bring the water and butter to a boil over medium-high heat.
Add the flour and salt all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
Remove from heat and let cool for a couple of minutes.
Add the eggs one at a time, beating well after each addition until the mixture is smooth.
Transfer the dough to a piping bag fitted with a large round tip.
Pipe small mounds onto the prepared baking sheet, leaving space between each for expansion.
Bake for 15 minutes, then reduce the oven temperature to 350°F (180°C) and continue baking for another 20-25 minutes, or until golden brown and puffed.
Remove from the oven and let cool completely on a wire rack.
Once cooled, slice the puffs in half horizontally and fill with whipped cream or pastry cream.
