500g fish fillets (such as cod, haddock, or tilapia)
1/2 cup breadcrumbs
1 egg, beaten
1/4 cup milk
2 tablespoons chopped fresh parsley
1 teaspoon lemon zest
Salt and pepper to taste
Olive oil for frying
★Instructions
Preheat your oven to 180°C (350°F).
Cut the fish fillets into small pieces and place them in a food processor. Pulse until the fish is finely chopped, but not completely smooth.
Take small portions of the fish mixture and shape them into rolls.
Transfer the chopped fish to a mixing bowl and add the breadcrumbs, beaten egg, milk, chopped parsley, lemon zest, salt, and pepper. Mix well until everything is evenly combined.
Heat some olive oil in a frying pan over medium heat. Once the oil is hot, add the fish rolls and cook for 2-3 minutes on each side, or until golden brown.
Transfer the partially cooked fish rolls to a baking dish and bake in the preheated oven for 10-15 minutes, or until cooked through.
Serve the fish rolls hot with your favorite dipping sauce or a side of vegetables. Enjoy !
