Roasted garlic mushrooms recipe

★Ingredients

1 lb (450g) mushrooms (such as cremini or white button), cleaned and trimmed

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon balsamic vinegar

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

Salt and pepper to taste

Fresh parsley, chopped (optional, for garnish)

★Instructions

Preheat the Oven:
Preheat your oven to 400°F (200°C).

Prepare the Mushrooms:
If the mushrooms are large, halve or quarter them to ensure even roasting. Place the cleaned and trimmed mushrooms in a large mixing bowl.

Make the Marinade:
In a small bowl, mix together the minced garlic, olive oil, balsamic vinegar, thyme, salt, and pepper.

Combine:
Pour the marinade over the mushrooms and toss to coat them evenly.

Roast the Mushrooms:
Spread the mushrooms in a single layer on a baking sheet. Make sure they are not too crowded to allow for proper roasting.

Bake:
Roast in the preheated oven for 20-25 minutes, stirring once halfway through, until the mushrooms are tender and golden brown.

Serve:
Remove from the oven and transfer to a serving dish. Garnish with fresh parsley if desired.

Tips:

  • For an added touch, sprinkle some grated Parmesan cheese over the mushrooms in the last 5 minutes of roasting.
  • You can also add a squeeze of fresh lemon juice after roasting for a burst of freshness.
