★Ingredients

2 cups cooked rice

2 cups broccoli florets, blanched

2 cups cooked and diced chicken breast

1 ½ cups shredded cheddar cheese

1 cup milk

1 cup chicken broth

2 tablespoons all-purpose flour

1 teaspoon garlic powder

2 tablespoons butter

Salt and pepper to taste

Optional: breadcrumbs for topping

★Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to make a roux.

Gradually whisk in the chicken broth and milk until smooth. Cook, stirring constantly, until the mixture thickens, about 5 minutes.

Stir in the garlic powder, salt, and pepper.

In a large mixing bowl, combine the cooked rice, diced chicken, blanched broccoli, and half of the shredded cheese. Pour the sauce over the mixture and stir until well combined.

Transfer the mixture to the prepared baking dish and spread it out evenly.

Sprinkle the remaining shredded cheese on top. If desired, sprinkle breadcrumbs over the cheese for an extra crispy topping.

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden brown on top.
