★Ingredients
1 lb ground beef
1 onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 can (8 oz) tomato sauce
1 small head cabbage, chopped
1/2 cup uncooked long-grain rice
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Chopped fresh parsley for garnish
★Instructions
In a large pot or Dutch oven, brown the ground beef over medium-high heat until no longer pink. Drain any excess fat.
Add the diced onion and minced garlic to the pot, and sauté until softened, about 3-4 minutes.
Stir in the beef broth, diced tomatoes, tomato sauce, rice, chopped cabbage, thyme, and paprika. Bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the cabbage is tender and the rice is cooked.
Season with salt and pepper to taste.
Serve hot, garnished with chopped fresh parsley if desired.
