8 ounces spaghetti noodles
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup black olives, sliced
1/2 red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Dressing
1/4 cup olive oil
1 clove garlic, minced
2 tablespoons red wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste
★Instructions
- Cook the spaghetti noodles according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked spaghetti, cherry tomatoes, cucumber, red onion, black olives, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, honey, salt, and pepper to make the dressing.
- Pour the dressing over the spaghetti salad and toss until everything is well coated.
