Spaghetti salad

★Ingredients

8 ounces spaghetti noodles

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup black olives, sliced

1/2 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Dressing

1/4 cup olive oil

1 clove garlic, minced

2 tablespoons red wine vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

★Instructions

  1. Cook the spaghetti noodles according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked spaghetti, cherry tomatoes, cucumber, red onion, black olives, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, honey, salt, and pepper to make the dressing.
  4. Pour the dressing over the spaghetti salad and toss until everything is well coated.
  5. Sprinkle grated Parmesan cheese over the salad and toss again.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve chilled or at room temperature. Enjoy your spaghetti salad!
