Creamy potato soup

★Ingredients

4 large potatoes, peeled and diced

2 cloves garlic, minced

1 onion, chopped

4 cups vegetable or chicken broth

1 cup heavy cream

2 tablespoons butter

Optional toppings: shredded cheese, chopped green onions, crispy bacon bits

Salt and pepper to taste

★Instructions

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth, then return it to the pot.

Add the diced potatoes to the pot, along with the vegetable or chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.

Stir in the heavy cream and season with salt and pepper to taste. Heat through, but do not boil once the cream has been added.

Ladle the creamy potato soup into bowls and serve hot, topped with your choice of shredded cheese, chopped green onions, or crispy bacon bits.
