★Ingredients

1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) refried beans

1 can (4 oz) diced green chilies

1 can (10 oz) red enchilada sauce

4 large flour tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

Optional toppings: chopped tomatoes, sliced olives, sour cream, chopped cilantro

Crispy Black Bean Tacos

Pork chops with honey garlic

★Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, cook the ground beef or turkey over medium heat until browned. Add diced onion and minced garlic, cooking until onions are soft and translucent.

Stir in the taco seasoning and cook for another minute.

Warm the refried beans in a saucepan over low heat.

To assemble the burritos, spread a quarter of the refried beans down the center of each tortilla, then top with a quarter of the meat mixture. Sprinkle with shredded cheese and roll up the tortillas, tucking in the ends to enclose the filling.

Place the rolled burritos seam-side down in a baking dish.

Pour the enchilada sauce over the burritos, making sure they are evenly coated.

Sprinkle diced green chilies over the top, then sprinkle with more shredded cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

Remove the foil and bake for an additional 5 minutes to lightly brown the cheese.

Serve the wet burritos hot, topped with optional toppings like chopped tomatoes, sliced olives, sour cream, and chopped cilantro.

Enjoy!
