Apple bubble up casserole

★Ingredients

2 cans (16.3 oz each) refrigerated biscuits

4 cups peeled, cored, and diced apples (about 4 medium apples)

1 cup granulated sugar

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

1/2 cup heavy cream

1 cup light brown sugar, packed

1 teaspoon vanilla extract

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare Biscuits: Cut each biscuit into quarters and set aside.
  3. Prepare Apples: In a large bowl, mix the diced apples with granulated sugar, cinnamon, and nutmeg until evenly coated.
  4. Combine Ingredients: Add the biscuit pieces to the apple mixture and gently toss to combine.
  5. Prepare Sauce: In a medium saucepan, combine the melted butter, brown sugar, and heavy cream. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat and stir in the vanilla extract.
  6. Assemble Casserole: Pour half of the sauce into the bottom of the prepared baking dish. Add the apple and biscuit mixture on top, spreading it out evenly. Pour the remaining sauce over the top.
  7. Bake: Bake in the preheated oven for 35-40 minutes, or until the biscuits are golden brown and cooked through. If the top starts to brown too quickly, cover with aluminum foil for the remaining baking time.
  8. Serve: Let the casserole cool for a few minutes before serving. Serve warm, topped with vanilla ice cream or whipped cream if desired.
