★Ingredients
4 salmon fillets (about 6 ounces each)
2 tablespoons olive oil
2 tablespoons lemon juice
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
1 lemon, thinly sliced
Fresh parsley, chopped (for garnish)
★Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Foil: Lay out 4 large pieces of aluminum foil, each large enough to wrap around a salmon fillet.
- Prepare Marinade: In a small bowl, mix together the olive oil, lemon juice, minced garlic, dried thyme, dried oregano, dried parsley, salt, and pepper.
- Assemble Packets:
- Place a salmon fillet in the center of each piece of foil.
- Drizzle the olive oil mixture over each fillet, ensuring they are evenly coated.
- Top each fillet with 2-3 lemon slices.
- Seal Packets: Fold the sides of the foil over the salmon, covering completely and sealing the packets closed.
- Bake: Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve: Carefully open the foil packets (beware of hot steam) and transfer the salmon to plates. Garnish with fresh chopped parsley before serving.
Enjoy!
