Cheese fries made from boiled potatoes

★Ingredients

4 large potatoes

2 cups shredded cheddar cheese (or your favorite cheese)

Salt, to taste

Black pepper, to taste

2 tablespoons olive oil

1 teaspoon paprika (optional)

1 teaspoon garlic powder (optional)

2 tablespoons chopped fresh chives or green onions (optional)

Sour cream, for serving (optional)

★Instructions

  1. Boil the Potatoes:
  • Peel the potatoes and cut them into thick fries or wedges.
  • Place the potatoes in a large pot, cover with cold water, and add a pinch of salt.
  • Bring to a boil, then reduce the heat and simmer until the potatoes are just tender but not falling apart, about 10-12 minutes.
  • Drain the potatoes and let them cool slightly.
  1. Preheat the Oven:
  • Preheat your oven to 425°F (220°C).
  1. Season the Potatoes:
  • Place the boiled potatoes on a baking sheet.
  • Drizzle with olive oil and sprinkle with salt, black pepper, paprika, and garlic powder. Toss to coat evenly.
  1. Bake the Fries:
  • Spread the potatoes out in a single layer on the baking sheet.
  • Bake in the preheated oven for 20-25 minutes, or until the fries are golden and crispy, turning them halfway through the baking time.
  1. Add the Cheese:
  • Remove the baking sheet from the oven.
  • Sprinkle the shredded cheese evenly over the fries.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Remove the cheese fries from the oven.
  • Sprinkle with chopped chives or green onions, if using.
  • Serve immediately with sour cream on the side, if desired.
