★Instructions
- Boil the Potatoes:
- Peel the potatoes and cut them into thick fries or wedges.
- Place the potatoes in a large pot, cover with cold water, and add a pinch of salt.
- Bring to a boil, then reduce the heat and simmer until the potatoes are just tender but not falling apart, about 10-12 minutes.
- Drain the potatoes and let them cool slightly.
- Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Season the Potatoes:
- Place the boiled potatoes on a baking sheet.
- Drizzle with olive oil and sprinkle with salt, black pepper, paprika, and garlic powder. Toss to coat evenly.
- Bake the Fries:
- Spread the potatoes out in a single layer on the baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the fries are golden and crispy, turning them halfway through the baking time.
- Add the Cheese:
- Remove the baking sheet from the oven.
- Sprinkle the shredded cheese evenly over the fries.
- Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the cheese fries from the oven.
- Sprinkle with chopped chives or green onions, if using.
- Serve immediately with sour cream on the side, if desired.
