2 large flour tortillas
300g (about 10 oz) beef sirloin or flank steak, thinly sliced
1 onion, thinly sliced
1 bell pepper (any color), thinly sliced
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon cumin
Salt and pepper to taste
100g (about 3.5 oz) shredded cheese (cheddar, mozzarella, or your preferred type)
1 cup fresh spinach leaves or lettuce
2 tablespoons sour cream or Greek yogurt
2 tablespoons salsa or diced tomatoes
Optional: 1 avocado, sliced

★Instructions
- Prepare the Beef:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the thinly sliced beef and cook for about 3-4 minutes until browned.
- Remove the beef from the skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add the onion and bell pepper. Sauté for about 5 minutes until they start to soften.
- Add the minced garlic, paprika, cumin, salt, and pepper. Cook for another 2-3 minutes.
- Combine Beef and Vegetables:
- Return the beef to the skillet with the vegetables. Mix well and cook for an additional 2 minutes to combine the flavors.
- Assemble the Wrap:
- Warm the tortillas in a dry skillet or microwave for a few seconds until pliable.
- Place a generous portion of the beef and vegetable mixture in the center of each tortilla.
- Sprinkle shredded cheese over the beef mixture.
- Add fresh spinach leaves or lettuce on top.
- Add a dollop of sour cream or Greek yogurt and salsa or diced tomatoes.
- Optionally, add slices of avocado.
- Wrap and Serve:
- Fold the sides of the tortilla over the filling, then roll from the bottom to create a wrap.
- Cut the wraps in half if desired, and serve immediately.
