Wrap from the bottom

★Ingredients

2 large flour tortillas

300g (about 10 oz) beef sirloin or flank steak, thinly sliced

1 onion, thinly sliced

1 bell pepper (any color), thinly sliced

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

100g (about 3.5 oz) shredded cheese (cheddar, mozzarella, or your preferred type)

1 cup fresh spinach leaves or lettuce

2 tablespoons sour cream or Greek yogurt

2 tablespoons salsa or diced tomatoes

Optional: 1 avocado, sliced

★Instructions

  1. Prepare the Beef:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the thinly sliced beef and cook for about 3-4 minutes until browned.
  • Remove the beef from the skillet and set aside.
  1. Cook the Vegetables:
  • In the same skillet, add the onion and bell pepper. Sauté for about 5 minutes until they start to soften.
  • Add the minced garlic, paprika, cumin, salt, and pepper. Cook for another 2-3 minutes.
  1. Combine Beef and Vegetables:
  • Return the beef to the skillet with the vegetables. Mix well and cook for an additional 2 minutes to combine the flavors.
  1. Assemble the Wrap:
  • Warm the tortillas in a dry skillet or microwave for a few seconds until pliable.
  • Place a generous portion of the beef and vegetable mixture in the center of each tortilla.
  • Sprinkle shredded cheese over the beef mixture.
  • Add fresh spinach leaves or lettuce on top.
  • Add a dollop of sour cream or Greek yogurt and salsa or diced tomatoes.
  • Optionally, add slices of avocado.
  1. Wrap and Serve:
  • Fold the sides of the tortilla over the filling, then roll from the bottom to create a wrap.
  • Cut the wraps in half if desired, and serve immediately.
