1 cup of brown sugar, packed
1/2 cup of light corn syrup
1 cup of unsalted butter
1 teaspoon of vanilla extract
1/2 teaspoon of baking soda
1/2 teaspoon of salt
★Instructions
- Prepare Popcorn: Pop the popcorn and place it in a large bowl, making sure to remove any unpopped kernels.
- Make Caramel Sauce:
- In a medium saucepan over medium heat, melt the butter.
- Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly.
- Once it starts boiling, stop stirring and let it boil for 5 minutes without stirring.
- Add Baking Soda and Vanilla:
- Remove the saucepan from heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.
- Combine Popcorn and Caramel:
- Pour the caramel sauce over the popcorn, stirring well to coat all the popcorn evenly.
- Bake:
- Preheat your oven to 250°F (120°C).
- Spread the caramel-coated popcorn on a large baking sheet lined with parchment paper.
- Bake for 1 hour, stirring every 15 minutes to ensure even coating and baking.
- Cool and Store:
- Remove the popcorn from the oven and let it cool completely. Break apart any large clumps.
- Store the caramel popcorn in an airtight container for up to a week.
