★Ingredients

3-4 medium-sized beets

1 cup water

1/2 cup granulated sugar

1 cup apple cider vinegar

1 teaspoon salt

1/2 teaspoon whole cloves (optional)

1/2 teaspoon mustard seeds (optional)

★Instructions

  1. Prepare the Beets:
  • Rinse the beets under cold water to remove any dirt.
  • Place the beets in a large pot and cover with water. Bring to a boil and then reduce the heat to a simmer.
  • Cook the beets for 30-40 minutes or until they are tender when pierced with a fork.
  • Drain the beets and allow them to cool.
  • Once cooled, peel the beets (the skin should come off easily) and slice them into thin rounds.
  1. Prepare the Pickling Liquid:
  • In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt.
  • Add the whole cloves and mustard seeds if using.
  • Bring the mixture to a boil over medium heat, stirring until the sugar is dissolved.
  1. Pickle the Beets:
  • Place the sliced beets into a glass jar or a non-reactive container.
  • Pour the hot pickling liquid over the beets, ensuring they are fully submerged.
  • Let the mixture cool to room temperature, then cover and refrigerate for at least 24 hours before serving to allow the flavors to develop.
