2 salmon fillets, skin-on
1 tablespoon olive oil or vegetable oil
Salt and pepper, to taste

★Instructions
- Prep the Salmon: Pat the salmon fillets dry with paper towels. This helps in achieving crispy skin.
- Seasoning: Season the skin side of the salmon fillets generously with salt and pepper.
- Cooking:
- Heat a non-stick or cast iron skillet over medium-high heat.
- Add the oil to the skillet and wait until it’s shimmering hot (but not smoking).
- Place the salmon fillets in the skillet, skin-side down. Press gently with a spatula for a few seconds to ensure the skin makes good contact with the pan.
- Cook without moving for about 4-5 minutes, depending on the thickness of the fillets. You should see the edges of the salmon turning opaque.
- Flip and Finish:
- Carefully flip the salmon fillets and cook on the other side for an additional 2-3 minutes, or until the salmon reaches your desired level of doneness.
- Serve: Remove from heat and let the salmon rest for a minute. Serve immediately, skin-side up, with optional lemon wedges and fresh herbs for garnish.
