CRISPY-SKINNED SALMON

★Ingredients

2 salmon fillets, skin-on

1 tablespoon olive oil or vegetable oil

Salt and pepper, to taste

Optional: lemon wedges, fresh herbs for garnish

Meat broth with frozen vegetables

Tacos with Potatoes and Green Peppers

★Instructions

  1. Prep the Salmon: Pat the salmon fillets dry with paper towels. This helps in achieving crispy skin.
  2. Seasoning: Season the skin side of the salmon fillets generously with salt and pepper.
  3. Cooking:
  • Heat a non-stick or cast iron skillet over medium-high heat.
  • Add the oil to the skillet and wait until it’s shimmering hot (but not smoking).
  • Place the salmon fillets in the skillet, skin-side down. Press gently with a spatula for a few seconds to ensure the skin makes good contact with the pan.
  • Cook without moving for about 4-5 minutes, depending on the thickness of the fillets. You should see the edges of the salmon turning opaque.
  1. Flip and Finish:
  • Carefully flip the salmon fillets and cook on the other side for an additional 2-3 minutes, or until the salmon reaches your desired level of doneness.
  1. Serve: Remove from heat and let the salmon rest for a minute. Serve immediately, skin-side up, with optional lemon wedges and fresh herbs for garnish.
