Meat broth with frozen vegetables

Ingredients

2 cloves of garlic, minced

1 onion, diced

1 pound of stewing beef, cubed

2 carrots, sliced

2 cups of frozen mixed vegetables (carrots, peas, corn)

2 potatoes, diced

4 cups of beef broth

1 teaspoon of dried thyme

1 tablespoon of tomato paste

Salt and pepper to taste

2 tablespoons of olive oil

★Instructions

Heat olive oil in a large pot over medium heat. Add the diced onions and minced garlic, sauté until translucent.

Add the cubed beef to the pot and brown on all sides.

Stir in the tomato paste and dried thyme, cook for another minute.

Pour in the beef broth and bring the mixture to a simmer. Cover and cook for about 1 hour, or until the beef is tender.

Add the sliced carrots, diced potatoes, and frozen mixed vegetables to the pot. Cook for an additional 20-30 minutes, or until the vegetables are tender.

Season with salt and pepper to taste.
