Lemon Cranberry Almond Oatmeal Cookies

★Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon lemon zest (from about 1 lemon)

1 teaspoon baking soda

1/2 teaspoon salt

2 cups old-fashioned rolled oats

1 cup dried cranberries

1 cup chopped almonds (or slivered almonds)

★Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Flavorings: Beat in the eggs one at a time, followed by the vanilla extract and lemon zest.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add Oats and Mix-ins: Stir in the rolled oats, dried cranberries, and chopped almonds until evenly distributed.
  7. Form Cookies: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Bake for 10-12 minutes, or until the edges are golden brown. The centers might look slightly undercooked but will set as they cool.
  9. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
