★Instructions
- Preheat Oven:
Preheat your oven to 375°F (190°C). - Prepare Filling:
In a bowl, mix the softened cream cheese, crumbled bacon, and shredded cheddar cheese. - Prepare Chicken:
- Place each chicken breast between two sheets of plastic wrap or parchment paper.
- Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2 inch thick.
- Season both sides of the chicken with salt and pepper.
- Stuff Chicken:
- Spread a generous amount of the cream cheese mixture onto one side of each chicken breast.
- Fold the chicken over to enclose the filling, securing with toothpicks if needed.
- Prepare Breading:
- Set up a breading station: Place flour in one bowl, beat the egg in another, and place the crushed Doritos in a third bowl.
- Dredge each stuffed chicken breast in the flour, shaking off the excess.
- Dip in the beaten egg, then coat with crushed Doritos, pressing gently to adhere.
- Cook Chicken:
- Heat a skillet with a bit of cooking oil over medium heat.
- Add the chicken breasts and cook for about 3-4 minutes per side, until golden brown.
- Transfer the browned chicken to a baking dish.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the filling is hot.
- Serve:
Let the chicken rest for a few minutes before removing toothpicks and serving.
