Lamb chops over mashed lobster with asparagus

★Ingredients

Lamb Chops:

8 lamb chops

2 cloves garlic, minced

2 tbsp olive oil

1 tsp fresh rosemary, chopped

1 tsp fresh thyme, chopped

Salt and pepper to taste

Mashed Lobster:

2 tbsp butter

2 lobster tails, cooked and shelled

1/4 cup heavy cream

Salt and pepper to taste

Asparagus:

1 bunch asparagus, trimmed

Salt and pepper to taste

1 tbsp olive oil

1 lemon, zested and juiced

★Instructions

Lamb Chops:

  1. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Rub the mixture over the lamb chops and let them marinate for at least 30 minutes.
  3. Preheat the grill or a grill pan to medium-high heat.
  4. Grill the lamb chops for 3-4 minutes per side for medium-rare, or adjust the time for your preferred doneness.
  5. Let the chops rest for 5 minutes before serving.

Mashed Lobster:

  1. Cut the cooked lobster meat into small pieces.
  2. In a saucepan, melt the butter over medium heat.
  3. Add the lobster meat and cook for 2-3 minutes until heated through.
  4. Reduce the heat to low, stir in the heavy cream, and cook for another 2-3 minutes.
  5. Mash the lobster mixture slightly with a fork or potato masher, leaving some chunks for texture.
  6. Season with salt and pepper to taste.

Asparagus:

  1. Preheat the oven to 400°F (200°C).
  2. Place the asparagus on a baking sheet and drizzle with olive oil.
  3. Sprinkle with salt, pepper, and lemon zest.
  4. Roast for 15-20 minutes, until tender and slightly crispy.
  5. Drizzle with lemon juice before serving.

To Serve:

  1. Place a generous scoop of mashed lobster in the center of each plate.
  2. Arrange two lamb chops on top of the mashed lobster.
  3. Add a serving of roasted asparagus on the side.
  4. Garnish with extra rosemary or thyme if desired.
