Lamb Chops:
8 lamb chops
2 cloves garlic, minced
2 tbsp olive oil
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Salt and pepper to taste
Mashed Lobster:
2 tbsp butter
2 lobster tails, cooked and shelled
1/4 cup heavy cream
Salt and pepper to taste
Asparagus:
1 bunch asparagus, trimmed
Salt and pepper to taste
1 tbsp olive oil
1 lemon, zested and juiced
★Instructions
Lamb Chops:
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture over the lamb chops and let them marinate for at least 30 minutes.
- Preheat the grill or a grill pan to medium-high heat.
- Grill the lamb chops for 3-4 minutes per side for medium-rare, or adjust the time for your preferred doneness.
- Let the chops rest for 5 minutes before serving.
Mashed Lobster:
- Cut the cooked lobster meat into small pieces.
- In a saucepan, melt the butter over medium heat.
- Add the lobster meat and cook for 2-3 minutes until heated through.
- Reduce the heat to low, stir in the heavy cream, and cook for another 2-3 minutes.
- Mash the lobster mixture slightly with a fork or potato masher, leaving some chunks for texture.
- Season with salt and pepper to taste.
Asparagus:
- Preheat the oven to 400°F (200°C).
- Place the asparagus on a baking sheet and drizzle with olive oil.
- Sprinkle with salt, pepper, and lemon zest.
- Roast for 15-20 minutes, until tender and slightly crispy.
- Drizzle with lemon juice before serving.
To Serve:
- Place a generous scoop of mashed lobster in the center of each plate.
- Arrange two lamb chops on top of the mashed lobster.
- Add a serving of roasted asparagus on the side.
- Garnish with extra rosemary or thyme if desired.
