3-4 medium-sized beets
1 cup water
1/2 cup granulated sugar
1 cup apple cider vinegar
1 teaspoon salt
1/2 teaspoon whole cloves (optional)
1/2 teaspoon mustard seeds (optional)

- Prepare the Beets:
- Rinse the beets under cold water to remove any dirt.
- Place the beets in a large pot and cover with water. Bring to a boil and then reduce the heat to a simmer.
- Cook the beets for 30-40 minutes or until they are tender when pierced with a fork.
- Drain the beets and allow them to cool.
- Once cooled, peel the beets (the skin should come off easily) and slice them into thin rounds.
- Prepare the Pickling Liquid:
- In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt.
- Add the whole cloves and mustard seeds if using.
- Bring the mixture to a boil over medium heat, stirring until the sugar is dissolved.
- Pickle the Beets:
- Place the sliced beets into a glass jar or a non-reactive container.
- Pour the hot pickling liquid over the beets, ensuring they are fully submerged.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 24 hours before serving to allow the flavors to develop.
