Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper. - Prepare the Topping:
In a small bowl, mix together the 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Set aside. - Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside. - Cream Butter and Sugars:
In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. - Add Eggs and Vanilla:
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. - Combine with Sour Cream:
Add the sour cream (or yogurt) to the wet mixture and blend until combined. - Incorporate Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix. - Fold in Apples:
Gently fold in the diced apples until they are evenly distributed throughout the batter. - Transfer to Baking Pan:
Spread the batter evenly into the prepared baking pan. - Add Topping:
Sprinkle the cinnamon-sugar mixture evenly over the top of the batter. - Bake:
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. - Cool and Serve:
Allow the cake to cool in the pan on a wire rack. Once cooled, cut into squares and serve.
