Apple Cake with Cinnamon

★Ingredients

For the cake:

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream or plain yogurt

2 cups peeled, cored, and diced apples (about 2-3 medium apples)

For the topping:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

★Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper.
  2. Prepare the Topping:
    In a small bowl, mix together the 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Set aside.
  3. Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. Cream Butter and Sugars:
    In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add Eggs and Vanilla:
    Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Combine with Sour Cream:
    Add the sour cream (or yogurt) to the wet mixture and blend until combined.
  7. Incorporate Dry Ingredients:
    Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
  8. Fold in Apples:
    Gently fold in the diced apples until they are evenly distributed throughout the batter.
  9. Transfer to Baking Pan:
    Spread the batter evenly into the prepared baking pan.
  10. Add Topping:
    Sprinkle the cinnamon-sugar mixture evenly over the top of the batter.
  11. Bake:
    Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  12. Cool and Serve:
    Allow the cake to cool in the pan on a wire rack. Once cooled, cut into squares and serve.
