Cream Cheese and Bacon Stuffed Doritos Chicken

6 strips of bacon, cooked and crumbled

4 oz cream cheese, softened

4 boneless, skinless chicken breasts

1 cup shredded cheddar cheese

1 cup crushed Doritos (or more, as needed)

1 egg

1/2 cup all-purpose flour

Salt and pepper, to taste

★Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare Filling:
    In a bowl, mix the softened cream cheese, crumbled bacon, and shredded cheddar cheese.
  3. Prepare Chicken:
  • Place each chicken breast between two sheets of plastic wrap or parchment paper.
  • Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2 inch thick.
  • Season both sides of the chicken with salt and pepper.
  1. Stuff Chicken:
  • Spread a generous amount of the cream cheese mixture onto one side of each chicken breast.
  • Fold the chicken over to enclose the filling, securing with toothpicks if needed.
  1. Prepare Breading:
  • Set up a breading station: Place flour in one bowl, beat the egg in another, and place the crushed Doritos in a third bowl.
  • Dredge each stuffed chicken breast in the flour, shaking off the excess.
  • Dip in the beaten egg, then coat with crushed Doritos, pressing gently to adhere.
  1. Cook Chicken:
  • Heat a skillet with a bit of cooking oil over medium heat.
  • Add the chicken breasts and cook for about 3-4 minutes per side, until golden brown.
  • Transfer the browned chicken to a baking dish.
  1. Bake:
  • Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the filling is hot.
  1. Serve:
    Let the chicken rest for a few minutes before removing toothpicks and serving.
