★Ingredients

4 medium potatoes, peeled and diced

1 onion, diced

2 cloves garlic, minced

2 tablespoons butter

Salt and pepper to taste

1 cup chicken or vegetable broth

Optional: chopped fresh parsley for garnish

★Instructions

In a large skillet or pot, melt the butter over medium heat.

Add the diced onions and minced garlic, and sauté until fragrant and translucent.

Add the diced potatoes to the skillet, and season with salt and pepper.

Pour in the chicken or vegetable broth, enough to cover the potatoes.

Bring the mixture to a simmer, then reduce the heat to low and cover the skillet or pot.

Cook the potatoes for about 20-25 minutes, or until they are tender and easily pierced with a fork. Stir occasionally to ensure even cooking.

Once the potatoes are cooked, remove the lid and continue cooking for a few more minutes to allow any excess liquid to evaporate and the potatoes to slightly brown.

Garnish with chopped fresh parsley if desired, and serve hot as a side dish or enjoy on its own.

Enjoy!
