Creamy cake recipe

★Ingredients

For the Cake:

1 cup (240 ml) milk

1 tablespoon white vinegar or lemon juice

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

2 cups (250 g) all-purpose flour

1/2 teaspoon salt

1/2 cup (115 g) unsalted butter, softened

1 1/2 cups (300 g) granulated sugar

3 large eggs

1 tablespoon vanilla extract

For the Cream Filling:

  • 2 cups (480 ml) heavy cream
  • 1/2 cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract

For the Frosting (optional):

4 cups (500 g) powdered sugar

1/2 cup (115 g) unsalted butter, softened

1/4 cup (60 ml) heavy cream

1 teaspoon vanilla extract

★Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch (23 cm) round cake pans.
  2. Prepare the milk mixture: Combine the milk with the vinegar or lemon juice in a small bowl and set aside for about 5 minutes. This will make buttermilk.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream the butter and sugar: In a large bowl, beat the butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Combine wet and dry ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing just until incorporated.
  6. Bake the cakes: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. Prepare the cream filling: In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract together with an electric mixer until stiff peaks form.
  8. Assemble the cake: Place one cake layer on a serving plate. Spread the whipped cream evenly over the top. Place the second cake layer on top.
  9. Optional frosting: If you want to frost the cake, beat the butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract, beating until smooth and fluffy. Spread the frosting over the top and sides of the cake.
  10. Serve: Slice and serve the cake.
