Healthy Cabbage and Carrot Bake for Weight Loss

★Ingredients

1/2 medium head of cabbage, shredded

1 onion, finely chopped

2 large carrots, grated

2 cloves garlic, minced

1 tablespoon olive oil

1/2 cup low-fat Greek yogurt

1/4 cup grated Parmesan cheese

1/4 cup whole wheat breadcrumbs (optional for extra crunch)

1/2 teaspoon paprika

1/2 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish

★Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with a bit of olive oil.
  2. Prepare the vegetables: Shred the cabbage and grate the carrots. Finely chop the onion and mince the garlic.
  3. Sauté the vegetables: In a large pan, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they become soft and fragrant (about 3-4 minutes). Add the cabbage and carrots, and continue to cook until they start to soften (about 5-7 minutes). Season with salt, pepper, paprika, and thyme.
