Classic yogurt pancake

★Ingredients

  • 1 9-inch pie crust (store-bought or homemade)

For the Filling

1/4 cup all-purpose flour

1 1/2 cups granulated sugar

3 large eggs

1/2 cup unsalted butter, melted

1 cup buttermilk

1 tablespoon lemon juice

1/4 teaspoon salt

1 teaspoon vanilla extract

★Instructions

Preheat your oven to 350°F (175°C).

Place the pie crust in a 9-inch pie dish and set aside.

In a large bowl, whisk together the sugar and flour.

Add the melted butter and eggs to the sugar mixture, and whisk until well combined.

Stir in the buttermilk, vanilla extract, lemon juice, and salt until smooth.

Pour the filling into the prepared pie crust.

Bake for 45-50 minutes, or until the center is set and the top is golden brown.
