★Ingredients

  • 1 cup unsalted butter, softened
  • 5 large eggs, separated
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 cup shredded coconut
  • Cream Cheese Frosting:
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar

★Instructions

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks one at a time, then stir in vanilla extract.

In a separate bowl, combine flour and baking soda. Gradually add to the creamed mixture alternately with buttermilk, beginning and ending with flour mixture.

Stir in coconut and pecans.

In another bowl, beat egg whites until stiff peaks form. Gently fold into batter.

Divide batter evenly among prepared cake pans. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
