Grilled chicken and peppers with cheese

Ingredients

2 bell peppers (red, green, or a mix), sliced

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper to taste

1 onion, sliced

1 teaspoon paprika

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 teaspoon garlic powder

In a large bowl, toss the chicken breasts, sliced bell peppers, and onion with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.

Place the chicken breasts and vegetables on the preheated grill. Cook for 6-8 minutes per side, or until the chicken is cooked through and the vegetables are tender and slightly charred.

Preheat your grill to medium-high heat.

During the last few minutes of grilling, sprinkle the shredded cheese over the chicken breasts and vegetables. Close the grill lid and allow the cheese to melt.

Once the cheese is melted and bubbly, remove the chicken breasts and vegetables from the grill and transfer them to a serving platter.

Serve the grilled chicken and peppers hot, garnished with fresh herbs if desired.
