Chinese fried rice

★Ingredients

2 tablespoons vegetable oil

3 cups cooked rice (preferably day-old rice)

2 eggs, lightly beaten

1 cup mixed vegetables (such as peas, carrots, and corn)

1/2 cup diced onion

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

Green onions, chopped (for garnish)

Salt and pepper to taste

Sesame oil (optional)

★Instructions

Add the remaining tablespoon of vegetable oil to the skillet. Stir in the diced onion and minced garlic, and cook until softened and fragrant.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.

Add the mixed vegetables to the skillet and stir-fry until they are heated through and slightly softened.

Add the cooked rice to the skillet, breaking up any clumps with a spoon or spatula. Stir-fry the rice with the vegetables until heated through.

Return the cooked eggs to the skillet, breaking them up into smaller pieces as you stir-fry them with the rice and vegetables.

In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce mixture over the rice and stir to combine, ensuring that the rice is evenly coated.

Season the fried rice with salt and pepper to taste. If desired, drizzle a little sesame oil over the rice for extra flavor.

Garnish the fried rice with chopped green onions before serving.
