1/4 cup granulated sugar
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/2 cup powdered sugar
16 oz cream cheese, softened
1 tsp vanilla extract
1 cup fresh strawberries, diced
1 cup white chocolate chips, melted

★Instructions
Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
In a bowl, mix together graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
Stir in melted white chocolate until smooth. Fold in diced strawberries.
Pour the mixture over the graham cracker crust and spread it evenly.
Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
Allow the cheesecake bars to cool completely in the pan before refrigerating for at least 2 hours or until chiled.
